KISELOST GAZIRANIH I ENERGETSKIH NAPITAKA I PROMENE SALIVARNE PH
IN VIVO
ACIDITY OF CARBONATED AND ENERGY DRINKS AND CHANGES IN THE
SALIVARY PH IN VIVO

Rezime
Cilj: Izmeriti pH vrednosti gaziranih i energetskih napitaka različite temperature inicijalno i nakon stajanja, kao i promene
salivarnih pH vrednosti in vivo nakon konzumiranja Coca Cole i Red Bulla.
Metod: Ispitano je šest gaziranih (Coca Cola, Pepsi, Sprite, Fanta, Cockta i Schweppes) i pet energetskih napitaka (Red Bull,
Ultra, Booster, Burn i Guarana). pH je ispitivana pH-metrom (Eutech 510, Eutech Instruments) na temperaturi od oko 7°C i 33°C
neposredno nakon otvaranja napitka i nakon 7 dana stajanja. Kod 10 ispitanika uzrasta 19 godina, oba pola, pH nestimulisane
salive je merena neposredno pre i u intervalima 5, 15, 30 i 60 minuta nakon konzumiranja po 100 mL Coca Cole i Red Bulla.
Podaci za salivarnu pH obrađeni su primenom dvofaktorske analize varijanse za faktore “napitak” i “vreme” na nivou značajnosti
od 0,05.
Rezultati: Inicijalne pH vrednosti napitaka na 7°C iznosile su između 2,66 i 3,60, a na 33°C između 2,48 i 3,40. Najniže pH
vrednosti je pokazala Guarana, a najviše Red Bull. Nakon 7 dana stajanja, pH svih rashlađenih napitaka se povećala za 0,05-0,18,
a zagrejanih povećala ili smanjila za maksimalno 0,07 Nije bilo značajne razlike u pH salive nakon konzumiranja Coca Cole i Red
Bulla (p>0,05). Salivarna pH je značajno opala tokom prvih 5 minuta nakon konzumiranja napitaka (p<0,05), ali se nakon 15
minuta vratila skoro do bazalnih vrednosti (p>0,05).
Zakljuĉak: Kiselost gaziranih i energetskih napitaka je bila u opsegu od 2,5 do 3,6. Coca Cola i Red Bull su izazvali slične
promene pH nestimulisane salive in vivo.

Summary
Aim: To measure the pH of carbonated and energy drinks initially and after 7 days as well as salivary pH changes in vivo after
consumption of Coca Cola and Red Bull.
Method: Six carbonated (Coca Cola, Pepsi, Sprite, Fanta, Cockta and Schweppes) and five energy drinks (Red Bull, Ultra,
Booster, Burn and Guarana) were tested. pH was measured using a pH-meter (Eutech 510, Eutech Instruments) at about 7°C and
33°C immediately after opening and after 7 days. The pH of unstimulated saliva was measured in 10 subjects 19 years old, both
sexes, immediately before and 5, 15, 30 and 60 minutes after consuming Coca Cola and Red Bull, 100 mL each. Salivary pH data
were analyzed using a two-way analysis of variance for the factors “drink” and “time” at a level of significance of 0.05.
Results: Initial pH of all tested drinks was 2.66-3.60 at 7°C and 2.48-3.40 at 33°C. Guarana showed the lowest and Red Bull the
highest pH values. Seven days post-opening, the pH of all cold drinks increased by 0.05-0.18 whereas that of hot drinks increased
or decreased by up to 0.07. There was no significant difference in salivary pH after Coca Cola or Red Bull consumption (p>0.05).
Salivary pH significantly decreased over 5 minutes post-consumption (p<0.05) but returned nearly to basal values after 15
minutes (p>0.05).
Conclusion: Acidity of carbonated and energy drinks varied between 2.5 and 3.6. Coca Cola and Red Bull resulted in similar
changes in the pH of unstimulated saliva in vivo.
